Chef Pablo Torre

A Southern Culinary Visionary

At the heart of Marek's Collier House, where history and hospitality meet,

Chef Pablo Torre brings food to life with an artistry that blends tradition and innovation. From the moment he steps into the kitchen, there is a palpable sense of purpose—an energy born from his lifelong love for food. To Pablo, every dish is more than a recipe; it is a story, a memory, and a chance to connect guests with the soul of Southern culture. Raised in a family where meals were the centerpiece of daily life, Chef Pablo learned early on that food is a language of love and celebration. His culinary journey has been shaped by a reverence for craft—long hours mastering techniques, refining flavors, and honoring the ingredients that form the backbone of Southern cuisine. At Marek's, he takes the traditions of the South—smoked ribs kissed by oak, buttery biscuits layered with care, seafood fresh from the Gulf—and elevates them with a modern elegance that reflects his creative spirit. Chef Pablo is more than a technician; he is a storyteller. His plates carry the warmth of a Lowcountry porch, the charm of a Charleston market, and the richness of Southern heritagepassed down through generations. With each creation, he balances the rustic comfort of home cooking with the refinement of fine dining. A corn bisque becomes a velvet embrace of summer fields; shrimp and grits transform into a soulful symphony of land and sea; and pecan pie, in his hands, is no longer just dessert—it is a memory served on a plate. In the kitchen, Chef Pablo is a leader who inspires with quiet confidence. His team follows not just his instructions, but his example: respect for ingredients, patience in process, and pride in presentation. He teaches that cooking is not about rushing to the end, but about honoring the journey—tasting, adjusting, layering flavors until they sing in  harmony. For the guests of Marek's, dining under Chef Pablo’s direction is more than a meal; it is an experience steeped in Southern hospitality. Each plate carries his unmistakable signature—crafted with love, rooted in tradition, and touched with innovation. His passion ensures that every visit becomes a memory worth savoring, and every dish tells a story only he can tell. Chef Pablo Torre is not just the culinary heart of Marek's Collier House; he is its soul.

OUR STORY

In 2024, entrepreneur Trese Hadge brought her vision of Southern hospitality to life by opening
Pub 1105 in the historic Village of Olde Marco. Located at 1105 Bald Eagle Drive, the
establishment quickly became a local favorite, offering an eclectic Southern pub experience with
an inviting bar and cozy dining atmosphere.

As the brand continued to grow, Pub 1105 underwent a thoughtful transformation to embrace a
more playful, sports-oriented environment—a space designed for lively gatherings, great food,
and a fun, social atmosphere. These changes were made to create more diversity between our
brands, allowing Pub 1105 to shine as the go-to spot for casual Southern dining and spirited
camaraderie, while maintaining the warmth and authenticity that made it a local favorite from the start.

Building on that success, Trese and her team have now opened

The Collier House Restaurant, a refined yet welcoming dining destination that celebrates

the heritage and charm of the South.
Set within a beautifully restored 1882 Collier family home, The Collier House blends history,

craftsmanship, and genuine warmth in every detail—from Chef Pablo Torre’s Southern-
inspired menu to the attentive service that defines the guest experience.

Together, Pub 1105 and The Collier House Restaurant represent Trese’s unwavering
commitment to creating distinctive, memorable spaces that embody Southern hospitality—
where every meal feels like home, every guest is welcomed like family. Every experience tells a story worth sharing.
